We are hoping to be able to feature all the entries in the Bacardi Legacy Cocktail Competition (before the finals) and by dint of being the most organised and getting in contact first we are proud to present Nelson Bernardes entry: the Perfect Host. Nelson is the Head Mixologist at Good Godfrey’s Bar at The Waldorf Hilton Hotel.
50ml Bacardi Superior
25ml Fresh Lime Juice
20ml Apple Juice
17.5ml Gomme Syrup
15ml Egg White
Celery & Basil
Muddle the celery in the bottom of the shaker; add the rest of ingredients and dry shake. Shake again with ice. Double strain into a chilled coupette and garnish with ground black pepper.
Nelson tell's us about himself and the inspiration for his cocktail:
Living as an ambitious adventurer who left my home country in search of a better and successful life, I’m always looking for some kind of guidance from motivational and inspiring stories of people or companies that started with nothing and then became successful. I couldn’t be more inspired with the Bacardi Family Business, a truly “never give up” Spirit! A Family with one goal in mind, which faced major adversities since the time they started to build their business but always found a way to turn it around.
The name “Perfect Host” was inspired by the legendary Raffael “Pappy” Valiente, referred in many articles as the Bacardi Sales Manager, in many others as a bartender, or simply as “The Host” and in fact he was a bit of all this and much more, he was a loyal member of the Bacardi Company which saw a great opportunity to sell even more Bacardi during the prohibition period in the United States, at this time, Cuba became an “American Bar” a place for fun and cocktails and “Pappy” (or father, as a person who takes care) used to welcome his American guests at the airport and then take them to El Edificio Bacardi the most famous art deco building in all Latin America and home of the most popular bar in town frequented by celebrities, Bacardi family members and their guests, he would make sure that they would have a great time while in Havana, he was the Perfect Host!
The cocktail itself relies on a simple recipe that works wonderfully together, its main flavour is the unusual combination of celery and basil which compliments Bacardi with some herbal notes and a sense of freshness, the egg white which personally I am a fan of, as used in many other classics such as Clover Club, Ramos Gin Fizz or Pisco Sour adds a silky texture and a pretty foamy appearance used also to place the grounded pepper as garnish.
