It Started With A Party...
Our review of the UK finalists in the Bacardi Legacy Cocktail Competition continues with Iain McPherson, the General Manager of The Voodoo Rooms in Edinburgh. There must be something special about The Voodoo Rooms as one of last year’s regional finalists and one of this year’s three most promising: Gordon Purnell can also be found working there.

Iain tells us: The inspiration for my cocktail comes from my childhood family memories. You can never relive your memories but you can always cherish them forever!
I look at the Bacardi history and it is steeped with family, tradition, parties and they always and still do strive for ultimate quality so I wanted to talk about those values in my life. Some of the stories of my past have never been told and what I wanted to do was put them into my drink so I can share them with you and also tell the story of parties my family would put on for guests just like Facundito Bacardi had put on a much grander and lavish scale in Cuba back in the day. After all the best things in life started with a party!
I wanted to create a cocktail that would be unique and bring a flavour profile that would get my guests thinking about the taste and enjoying it and a cocktail that would really showcase the Bacardi. A drink to me is not just about the flavour, the experience is very important too. I wanted to get my customers relating my stories to their own so not only will they enjoy my cocktail they will also enjoy remembering personal memories from long ago and even better the ones they had forgotten about. I hope that when I am still around or even when I am gone that my Siam Saoco (sa-oh-ko) can be my Legacy.
